Recognised and awarded as one of the most creative bartenders in the world, Clinton has provided his services in over 18 countries. He has worked in the biggest bar schools, helped train bartenders all over the globe and even flaired for royalty. Known in every corner of the world for his creativity, showmanship and world famous flair shows, Clint is recognised as one of the world’s top 10 flair bartenders and was personally asked to perform at the 2011 Royal Wedding for the Duke and Duchess of Kent.

With an exceptional eye for detail, Clinton’s entrepreneurial skills have seen him grow Pineapple Jam from a small mobile bar business to a multi-national consultancy agency. With a strong finger on the pulses of his clients and strong sense of business, he is able to tailor make bespoke packages for every individual business, showing off the best of your business and elevating your brand’s image.


Originally from France, Sophie has worked in the luxury restaurant industry in Paris. Accredited with Masters in International Hospitality Management, she is highly regarded within her specialist field for her skills in tourism and brand sales/ advocacy; skill which she finessed during her travels through Tahiti and Bora Bora in French Polynesia. With her vast knowledge and professional and passionate outlook, Sophie brings a touch of creative genius and is a key support to the Pineapple Jam team.


A managerial hospitality veteran with extensive hotel, restaurant and nightclub experience. Andy has been the president of the Australian Bartenders Guild for almost a decade and is highly regarded in his position. Andy’s familiarity and rapport with leading industry figures globally means he is extremely familiar with current food and drink trends. He was also the international ambassador, head judge and a chairman on the board for the educational development for the International Bartenders’ Association.
